There is nothing quite like a big pot of homemade chicken noodle soup simmering on the stove. It is the ultimate comfort food when you are feeling under the weather or just need something hearty to warm you up on a chilly evening.

My favorite trick for this recipe is to use a rotisserie chicken if you are short on time. It makes the prep work much faster without losing any of that lovely homemade flavor.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 large carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 8 ounces wide egg noodles
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the onion, carrots, and celery to the pot and cook until the vegetables start to soften, which takes about 5 to 7 minutes.

    Pour in the chicken broth and bring the mixture to a gentle boil.

    Add the egg noodles to the pot and cook according to the package directions until they are tender.

Store any leftovers in an airtight container in the fridge for up to three days. If you plan to have leftovers, consider cooking the noodles separately and adding them to individual bowls so they do not soak up all the broth and become mushy.
