There is something truly special about a bowl of soup that tastes both light and hearty at the same time. This lemon chicken orzo soup is a favorite in my kitchen because it is so soothing on a chilly day but still feels fresh thanks to the citrus.

My best advice for this recipe is to use fresh lemon juice rather than the bottled kind. The difference in brightness makes the whole pot taste much more vibrant.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup uncooked orzo pasta
  • 1/4 cup fresh lemon juice
  • 2 tablespoons fresh parsley, chopped
