Refreshing Watermelon Gazpacho

- 6 cups cubed seedless watermelon
- 1 English cucumber, chopped
- 1 pound ripe tomatoes, chopped
- 1 red bell pepper, chopped
- 1/4 red onion, chopped
- 1 clove garlic, minced
- 1/4 cup fresh basil or mint leaves
- 2 tablespoons extra virgin olive oil
- 1 tablespoon sherry vinegar
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Crumbled feta cheese for serving, optional

Place one portion into a blender along with the onion, garlic, herbs, olive oil, vinegar, salt, and pepper. Blend on high until the mixture is completely smooth.

Add the second portion of vegetables to the blender and pulse just a few times, leaving the pieces slightly chunky to give the soup some nice texture.

Pour the soup into a container, cover it, and let it chill in the refrigerator for at least two hours.
