There is nothing quite like the smell of a berry pie baking in the oven. This recipe is a favorite in our house because it uses simple ingredients to create a dessert that tastes like pure comfort.

My best tip for a beautiful crust is to keep your butter as cold as possible while you mix the dough. It makes all the difference when it comes to getting those lovely, light flakes in every bite.

Ingredients

  • 2 1/2 cups all purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6 to 8 tablespoons ice water
  • 4 cups frozen triple berry mix
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 egg, beaten for egg wash

Instructions

    Whisk the flour, salt, and sugar together in a large bowl.

    Cut in the cold butter until the mixture looks like coarse crumbs.

    Slowly add the ice water, one tablespoon at a time, mixing until the dough just holds together.

    Divide the dough into two disks, wrap them, and let them chill in the fridge for at least one hour.

    Preheat your oven to 400 degrees Fahrenheit.

    In a bowl, toss the frozen berries with the sugar, cornstarch, and lemon juice.

    Roll out one disk of dough and place it into a nine inch pie dish.
