Lemon Lush is one of those classic desserts that everyone seems to adore at potlucks and family gatherings. It is light, citrusy, and has the perfect balance of creamy and crunchy textures in every single bite.

Since this dessert needs to set in the fridge, it is a wonderful option to make the day before you need it. Just be sure to give it enough time to chill so the layers stay nice and firm when you go to slice it.

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup cold salted butter, cubed
  • 1 cup chopped pecans
  • 8 ounces softened cream cheese
  • 1 cup powdered sugar
  • 1 cup whipped topping, thawed
  • 2 packages 3.4 ounce instant lemon pudding mix
  • 3 cups cold milk
  • 2 cups whipped topping for the final layer

Instructions

    Preheat your oven to 350 degrees Fahrenheit.

    Mix the flour, butter, and pecans until crumbly, then press the mixture into the bottom of a 9 by 13 inch baking pan.

    Beat the cream cheese, powdered sugar, and 1 cup of whipped topping together until smooth, then spread this over the cooled crust.
