There is nothing quite like a perfectly baked potato when you want a simple and cozy dinner. The skin gets wonderfully crisp while the inside stays light and fluffy, making it the perfect base for anything you want to pile on top.

My biggest tip for success is to prick the potato skin with a fork a few times before it goes in the oven. This lets the steam escape so the potato cooks evenly and does not burst while baking.

Ingredients

  • 4 large russet potatoes, scrubbed clean
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, sliced thin
  • Salt and black pepper to taste

    Preheat your oven to 400 degrees Fahrenheit.

    Dry the potatoes thoroughly with a paper towel and rub them all over with olive oil.
