I have tried so many cheesecake recipes over the years, but this one is the clear winner for its smooth texture and perfect balance of flavors. The secret to a great cheesecake is using room temperature ingredients and baking it slowly in a water bath to prevent any cracks from forming on the surface.

You will love how the dense filling sits on a thick and crumbly crust. If you want a clean slice every time, just dip your knife in hot water and wipe it dry between every single cut you make.

Ingredients

  • 1 and 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 32 ounces cream cheese, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup full fat sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs, room temperature

Instructions

    Preheat your oven to 325 degrees and grease a 9 inch springform pan with a little butter.

    Mix the graham cracker crumbs, sugar, and melted butter in a bowl until the mixture looks like wet sand.

    Press the crumbs firmly into the bottom of the pan and bake for 10 minutes, then set it aside to cool completely.

    In a large bowl, beat the cream cheese and sugar together until the mixture is very smooth and creamy.

    Add the sour cream and vanilla extract, then mix again until everything is just combined.
