Classic Peanut Butter Scotcheroos
These chewy, crunchy treats are the perfect mix of peanut butter and chocolate goodness.
dailyrecipesbook.comScotcheroos are a favorite in my house because they come together so quickly without ever turning on the oven. You get that lovely crunch from the rice cereal paired with a sweet, creamy topping that everyone loves.
My secret for the best results is to gently melt your chocolate and butterscotch chips over low heat. It keeps the topping smooth and prevents it from seizing up while you spread it over the bars.
Ingredients
- 1 cup granulated sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- 6 cups crispy rice cereal
- 1 cup semi sweet chocolate chips
- 1 cup butterscotch chips
Instructions
- 1
Grease a 9 by 13 inch baking pan and set it aside.
- 2
In a large pot, combine the sugar and corn syrup over medium heat. Bring it to a gentle boil while stirring constantly, then remove it from the heat.
- 3
Stir in the peanut butter until the mixture is smooth and well combined.
- 4
Add the crispy rice cereal to the pot and stir until every piece is evenly coated in the peanut butter mixture.
- 5
Press the mixture firmly into your prepared pan using a greased spatula.
- 6
In a separate small saucepan or microwave safe bowl, melt the chocolate and butterscotch chips together until smooth.
- 7
Spread the melted chip mixture evenly over the top of the cereal layer.
- 8
Let the bars cool completely at room temperature until the topping is firm before you slice them into squares.
๐ก Tips
Store these bars in an airtight container at room temperature for up to a week. You can also keep them in the fridge if you prefer a firmer, colder treat during the summer months.
