Pasta alla Norma is a true Sicilian favorite that brings sunshine to your dinner table. The combination of sweet roasted eggplant and tangy tomato sauce is absolutely lovely, especially when finished with a generous sprinkle of ricotta salata cheese.

I prefer roasting the eggplant instead of frying it to keep things a bit lighter and easier. This method makes the eggplant tender and sweet while letting you focus on the sauce. It is a wonderful meal for busy weeknights when you want something fresh and satisfying.

Ingredients

  • 1 large eggplant, cut into cubes
  • 3 tablespoons olive oil
  • 1 pound rigatoni or penne pasta
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes (28 ounces)
  • 1/2 teaspoon red pepper flakes
  • 1 cup crumbled ricotta salata cheese
  • 1/4 cup fresh basil leaves, torn
  • Salt and black pepper to taste

Instructions

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the cubed eggplant with olive oil, salt, and pepper on a baking sheet. Roast for 25 minutes until tender and golden.

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente.

    While the pasta cooks, heat a splash of oil in a large skillet over medium heat. Add the onion and cook until soft.

    Stir in the garlic and red pepper flakes, cooking for another minute until fragrant.

    Add the roasted eggplant to the sauce and stir gently to combine.

Store any leftovers in an airtight container in the fridge for up to three days. If you cannot find ricotta salata, feta is a great substitute because it provides that same salty punch. Serve this with a simple green salad on the side to round out your meal.
