Zucchini bread is a total staple in my kitchen every summer. There is something so comforting about the smell of cinnamon and spices baking in the oven, and the zucchini keeps every slice incredibly soft and moist.

My biggest tip for success is to squeeze the extra moisture out of your grated zucchini with a paper towel. This ensures your bread turns out perfectly tender and never soggy.

Ingredients

  • 1 and 1/2 cups all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini

Instructions

    Preheat your oven to 350 degrees Fahrenheit and grease a standard loaf pan.

    In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.

    In a separate large bowl, beat the egg, granulated sugar, brown sugar, oil, and vanilla until smooth.

    Stir the grated zucchini into the wet ingredients.

    Gently fold the dry ingredients into the wet mixture until just combined, being careful not to overmix the batter.

    Pour the batter into your prepared loaf pan and bake for 45 to 50 minutes, or until a toothpick inserted into the center comes out clean.

Store this bread in an airtight container at room temperature for up to three days. It also freezes beautifully if you wrap individual slices in plastic wrap and store them in a freezer bag for up to two months.
