Ingredients

  • 1 can (13.5 ounces) full fat coconut milk
  • 1 1/2 cups chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons red curry paste
  • 1 tablespoon tomato paste
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 2 teaspoons fresh ginger, minced
  • 1 1/4 cups long grain white rice, uncooked
  • 1 1/2 pounds boneless skinless chicken breasts or thighs, cut into 1 inch pieces
  • 1 cup frozen edamame
  • 1 medium red bell pepper, sliced
  • Fresh cilantro for garnish

Instructions

    Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9 x 13 inch baking dish with cooking spray.

    In your prepared baking dish, combine the coconut milk, chicken broth, soy sauce, red curry paste, tomato paste, sesame oil, garlic, and ginger. Whisk everything together until the sauce is smooth.

    Sprinkle the dry rice evenly over the sauce mixture.

    Add the chicken pieces, edamame, and sliced red bell pepper on top, then use a spatula to gently spread everything into an even layer.
