There is something special about the mix of textures in this salad. Between the crispy chicken, the crunch of the noodles, and those bright mandarin oranges, it is always a hit for a quick lunch or a light dinner. It tastes just like the version you order at the restaurant but is so much easier to make at home.

My favorite trick for this recipe is to make sure your chicken is nice and golden. If you want to save some time, you can even use high quality store bought crispy chicken tenders instead of breading them yourself.

Ingredients

  • 2 boneless skinless chicken breasts
  • 1 cup flour
  • 1 cup buttermilk
  • 1 tablespoon vegetable oil
  • 1 head romaine lettuce, chopped
  • 1/2 cup sliced almonds
  • 1/2 cup chow mein noodles
  • 1 cup mandarin orange segments, drained
  • 1/2 cup store bought honey mustard or oriental dressing
  • Salt and pepper to taste

Instructions

    Cut the chicken breasts into bite sized strips and season them lightly with salt and pepper.

    Dip each piece of chicken into the buttermilk, then dredge in the flour until evenly coated.

    Heat the oil in a large skillet over medium heat and fry the chicken until golden brown and cooked through.

    Drain the cooked chicken on paper towels to remove any excess oil.

    In a large bowl, toss the chopped romaine lettuce with your preferred dressing.

    Divide the dressed lettuce onto plates and top with the warm crispy chicken.

    Sprinkle the almonds, chow mein noodles, and mandarin oranges over the top before serving immediately.

💡 Tips

Serve this salad right away so the noodles stay crunchy. If you have leftovers, store the chicken and salad components separately from the dressing to keep everything fresh.
