There is nothing quite like sitting down to a big bowl of Olive Garden pasta e fagioli. It is the perfect comfort food for a chilly day and always hits the spot when you want something filling that warms you up from the inside out.

My favorite thing about this recipe is how easy it is to pull together on a busy weeknight. If you have leftovers, they actually taste even better the next day once the flavors have had more time to meld together in the fridge.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 2 cans diced tomatoes, 14.5 ounces each
  • 1 can red kidney beans, 15 ounces, drained and rinsed
  • 1 can white kidney beans, 15 ounces, drained and rinsed
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces ditalini pasta
  • Fresh parsley for garnish

Instructions

    Brown the ground beef in a large pot or Dutch oven over medium heat until fully cooked. Drain off any excess fat.

    Add the onion, carrots, celery, and garlic to the pot. Sautรฉ for about 5 minutes until the vegetables start to soften.

    Stir in the diced tomatoes, kidney beans, beef broth, oregano, basil, salt, and pepper.

    Bring the mixture to a gentle boil, then turn the heat down to low. Cover and let it simmer for about 20 minutes.

    While the soup simmers, cook the ditalini pasta in a separate pot according to the package directions. Drain the pasta and set it aside.

    Add the cooked pasta to the soup pot just before serving. Taste and adjust seasonings if needed.

    Ladle into bowls and garnish with a sprinkle of fresh parsley before serving.

Store any leftovers in an airtight container in the fridge for up to 3 days. If the soup gets too thick, add a little extra beef broth when reheating. You can also freeze this soup without the pasta and add fresh noodles when you are ready to eat.
