It packs a punch with smoky adobo, zesty lime, and a mix of hearty vegetables that everyone loves. The addition of chili cheese chips brings an extra layer of flavor and crunch that turns a simple salad into something special.

This recipe is incredibly easy to toss together for a quick weeknight dinner or a weekend potluck. Since it requires no cooking, you can spend less time in the kitchen and more time enjoying your meal with friends and family.

Ingredients

  • 1 bag (16 ounces) coleslaw mix
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 1/2 cups frozen corn, thawed and drained
  • 1 1/2 cups red bell pepper, finely diced
  • 1/4 cup jalapeño pepper, seeded and finely diced
  • 1/4 cup green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 bag (9.75 ounces) chili cheese Fritos
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup fresh lime juice
  • 2 tablespoons adobo sauce from canned chipotle peppers
  • 2 tablespoons taco seasoning
  • 1/2 teaspoon garlic powder

Instructions

  1. 1

In a large bowl, combine the coleslaw mix, black beans, corn, red bell pepper, jalapeño, green onions, and cilantro.

  2. 2

In a separate small bowl, whisk together the mayonnaise, sour cream, lime juice, adobo sauce, taco seasoning, and garlic powder until smooth.

  3. 3

Pour the dressing over the coleslaw mixture and toss well to ensure everything is evenly coated.

  4. 4

Just before you are ready to serve, stir in the chili cheese Fritos and toss gently to combine.

  5. 5

Serve immediately while the chips are nice and crunchy.

💡 Tips

To prepare ahead, mix the vegetables and dressing separately and store them in the fridge for up to 24 hours. Only add the crunchy chips right before serving so they do not lose their texture. If you have leftovers, keep them in an airtight container in the fridge for up to 2 days, though note that the chips will soften over time.
