This creamy Boursin pasta is a household favorite because it requires so little effort for such a big reward. The herb garlic cheese melts down into a silky sauce that coats every noodle perfectly, while the tomatoes add a nice burst of sweetness.

I love making this when I need a quick meal that feels a bit special. If you want a bit more texture, try adding some toasted pine nuts or a sprinkle of crispy bacon on top before you serve it.

Ingredients

  • 12 ounces pasta of your choice
  • 1 package Boursin herb and garlic cheese
  • 2 cups cherry tomatoes
  • 3 cups fresh baby spinach
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup pasta water
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook your pasta according to the package instructions.
