My best tip for this recipe is to shred your own cheddar cheese from a block. Pre shredded bags are coated in starch that keeps them from melting smoothly, but a block of cheese will give you that perfect velvety texture.

Ingredients

  • 1/4 cup butter
  • 1 small onion, diced
  • 1/4 cup all purpose flour
  • 2 cups half and half
  • 2 cups vegetable or chicken broth
  • 1/2 teaspoon garlic powder
  • 4 cups fresh broccoli florets, chopped small
  • 1 cup carrots, shredded
  • 2 cups sharp cheddar cheese, shredded
  • Salt and black pepper to taste
