It is incredibly filling and satisfying for a weeknight dinner. If you want a little extra crunch, try topping your bowl with some crispy bacon bits or extra shredded cheddar cheese.

Ingredients

  • 1 pound ground beef
  • 3 cups chicken broth
  • 2 cups baby gold potatoes, diced
  • 1 cup chopped onion
  • 1 cup shredded carrots
  • 1 teaspoon dried parsley
  • 4 tablespoons butter
  • 1/4 cup all purpose flour
  • 2 cups shredded cheddar cheese
  • 1 1/2 cups milk
  • Salt and pepper to taste

Instructions

    Brown the ground beef in a large pot over medium heat until it is cooked through. Drain the excess grease and set the meat aside.
