This cheesecake fruit salad is a favorite in my house because it satisfies that sweet tooth while still feeling light and fresh. It is the perfect dish to bring to a summer barbecue or a family potluck because it disappears as soon as it hits the table.

My best tip for success is to make sure your cream cheese is softened to room temperature before you start. This ensures the dressing stays silky and smooth without any lumps of cheese throughout your beautiful fresh fruit.

Ingredients

  • 8 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 cups fresh strawberries, halved
  • 2 cups fresh blueberries
  • 2 large apples, chopped
  • 2 bananas, sliced

Instructions

  1. 1

In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until the mixture is smooth and creamy.

  2. 2

In a separate chilled bowl, whip the heavy cream until stiff peaks form.

  3. 3

Gently fold the whipped cream into the cream cheese mixture until well combined.

  4. 4

Add all of the prepared fruit into the bowl with the creamy dressing.

  5. 5

Use a large spatula to gently toss everything together until the fruit is evenly coated.

  6. 6

Serve immediately or keep it in the refrigerator for up to two hours before you are ready to eat.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to one day. Since bananas brown quickly, I recommend adding them right before serving if you plan on making this ahead of time.
