There is something so comforting about a pan of scalloped potatoes. It is the kind of dish that makes any family dinner feel special because everyone loves those tender potatoes coated in that rich, creamy cheese sauce.

My biggest tip is to use a mandoline or a very sharp knife to get the potato slices about the same thickness. This ensures they all cook at the same speed so you never end up with some pieces that are mushy and others that are still a bit firm.

Ingredients

  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1/4 cup unsalted butter
  • 1/4 cup all purpose flour
  • 2 cups whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

    Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for one minute.

    Gradually pour in the milk while whisking constantly to prevent lumps, then continue cooking until the sauce thickens.

    Remove the pan from the heat and stir in the salt, pepper, garlic powder, and one cup of the shredded cheese until smooth.

    Arrange half of the potato slices in the prepared baking dish and pour half of the cheese sauce over the top.

    Layer the remaining potatoes and pour the rest of the sauce over them, then sprinkle the remaining cup of cheese on top.

    Cover the dish with foil and bake for 45 minutes, then remove the foil and bake for another 20 minutes until the potatoes are tender and the top is golden brown.
