There is something so satisfying about a bowl of creamy carbonara, and this version with added chicken is a real crowd pleaser. It feels fancy enough for a weekend dinner but is simple enough to whip up on a busy Tuesday night.

The trick to that beautiful sauce is the heat from the pasta cooking the eggs, so make sure to take your pan off the burner before you stir them in. This keeps everything smooth and prevents the eggs from scrambling, which is the secret to a perfect texture every time.

Ingredients

  • 12 ounces spaghetti
  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 6 slices bacon, chopped
  • 3 large eggs
  • 1 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish

    Bring a large pot of salted water to a boil and cook the spaghetti according to the package directions until al dente.
