This chicken orzo bake is my go to meal when I want something comforting without spending all evening in the kitchen. It is a hearty dinner that feels like a warm hug on a busy weeknight.

My biggest tip for this recipe is to keep an eye on the oven during the last few minutes. You want the cheese on top to get nice and golden brown while keeping the orzo perfectly creamy underneath.

Ingredients

  • 1 pound chicken breast, cut into bite sized pieces
  • 1 cup uncooked orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 small zucchini, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried oregano
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
