Ingredients

  • 8 ounces penne pasta
  • 1 pound chicken breast, sliced into bite sized pieces
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced
  • 1/2 cup sun dried tomatoes, chopped
  • 3 cups fresh baby spinach
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, minced
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook the penne according to the package instructions until al dente.
