Soba noodle salad is one of my favorite meals for busy weeknights when you want something satisfying but light. It is packed with crunchy veggies and savory chicken, making it a complete meal that feels special enough for guests but is easy enough to whip up on a Tuesday.

I love keeping this recipe in my back pocket because it tastes even better the next day after the flavors have had time to meld in the fridge. For the best texture, try to rinse your noodles well in cold water immediately after boiling to keep them from getting sticky.

Ingredients

  • 8 ounces dried soba noodles
  • 2 cups cooked chicken breast, shredded or diced
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 2 green onions, thinly sliced
  • 1/2 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon lime juice
  • 1 tablespoon toasted sesame seeds

Instructions
