My top tip for this recipe is to wait until the very end to add the tortellini. Adding them during the last thirty minutes of cooking keeps them perfectly tender so they do not fall apart or get mushy in the slow cooker.

Ingredients

  • 1 pound Italian sausage
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes, 28 ounces
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 tablespoon tomato paste
  • 1 package refrigerated cheese tortellini, 20 ounces
  • 3 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

    Brown the Italian sausage and diced onion in a skillet over medium heat until the meat is cooked through.
