Creamy Garlic Mushroom Chicken

The mushrooms add a lovely earthy flavor that pairs perfectly with the garlic and Parmesan cheese. It is a fantastic meal to serve over pasta, rice, or even a side of roasted vegetables if you want to keep things a bit lighter. My biggest tip is to let the mushrooms brown well in the pan before adding your liquids, as that extra color brings so much flavor to the final sauce.
Ingredients
- 4 boneless and skinless chicken thighs
- 1/2 teaspoon salt
- 1/4 teaspoon freshly cracked black pepper
- 1 tablespoon cooking oil
- 2 teaspoons garlic, minced
- 8 ounces mushrooms, sliced
- 1/2 cup chicken broth
- 1 cup half and half, room temperature
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish, optional

Season both sides of the chicken thighs evenly with the salt and pepper.

Heat the oil in a large skillet over medium heat. Place the chicken thighs in the pan and cook for about five minutes per side until they are golden brown and fully cooked through.

Remove the chicken from the skillet to a plate and cover it with foil to keep it warm.

Add the sliced mushrooms to the same skillet. Cook them until they are browned and tender.
