There is nothing quite like the smell of bubbling cheese and potatoes coming from the oven. This recipe is a favorite in my house because it is pure comfort food that pairs perfectly with almost any main course.

To get the best texture, try to slice your potatoes very thin. You can use a mandoline if you have one, or just take your time with a sharp knife to ensure they cook evenly in that delicious sauce.

Ingredients

  • 2 pounds russet or Yukon Gold potatoes, thinly sliced
  • 1/4 cup unsalted butter
  • 1/4 cup all purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

    Preheat your oven to 375 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

    Melt the butter in a saucepan over medium heat, then whisk in the flour and cook for one minute.

    Gradually pour in the milk and heavy cream while whisking constantly until the mixture thickens slightly.

    Remove the pan from the heat and stir in the salt, pepper, garlic powder, and one cup of the cheese until smooth.

    Arrange half of the potato slices in the prepared dish and pour half of the sauce over them.

    Repeat with the remaining potatoes and sauce, then top with the rest of the cheese.

    Cover the dish with foil and bake for 40 minutes, then remove the foil and bake for another 20 minutes until the top is golden and the potatoes are fork tender.

Let the potatoes rest for about ten minutes before serving so the sauce can thicken up. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them gently in the oven.
