There is something so comforting about a big bowl of creamy fettuccine alfredo. It is one of those classic meals that feels fancy but is actually quite simple to pull together on a busy weeknight.

My secret to the perfect sauce is to use high quality parmesan cheese and keep the heat low. This prevents the sauce from breaking and ensures it stays perfectly smooth and velvety until the very last bite.

Ingredients

  • 1 pound fettuccine pasta
  • 1/2 cup unsalted butter
  • 2 cups heavy whipping cream
  • 1 1/2 cups freshly grated parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional fresh parsley for garnish

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions until al dente.

  2. 2

While the pasta cooks, melt the butter in a large skillet or saucepan over medium heat.

  3. 3

Add the minced garlic to the melted butter and cook for about one minute until fragrant, making sure not to brown it.

  4. 4

Pour in the heavy cream and let it simmer gently for about three to five minutes until it thickens slightly.

  5. 5

Whisk in the grated parmesan cheese until the sauce is completely smooth and creamy.

  6. 6

Season the sauce with salt and pepper to taste.

  7. 7

Drain the cooked pasta and toss it directly into the skillet with the sauce until every strand is well coated.

  8. 8

Serve immediately while hot, adding a sprinkle of fresh parsley if you like.

๐Ÿ’ก Tips

For the best results, grate your own parmesan cheese from a block instead of using the pre grated kind in a bag, as it melts much better. If you have leftovers, store them in an airtight container in the fridge and add a splash of milk or water when reheating to loosen the sauce.
