There is nothing quite like a bowl of homemade macaroni and cheese when you need comfort food fast. Using the pressure cooker means you do not have to boil a separate pot of water or worry about the noodles sticking, as everything cooks right in the pot for perfect results every time.

My favorite thing about this recipe is how consistent it is. If you want a little extra flavor, feel free to stir in a pinch of dry mustard or a dash of hot sauce right at the end to really make the cheese flavor pop.

Ingredients

  • 1 pound elbow macaroni
  • 4 cups chicken or vegetable broth
  • 1/4 cup unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 12 ounces shredded sharp cheddar cheese
  • 1/2 cup heavy cream

Instructions

  1. 1

Add the macaroni, broth, butter, salt, garlic powder, and black pepper into the Instant Pot insert.

  2. 2

Secure the lid and set the valve to sealing. Cook on high pressure for 4 minutes.

  3. 3

Once the timer finishes, perform a quick release to let the steam escape.

  4. 4

Open the lid and stir the mixture well, as there will be some liquid left at the bottom.

  5. 5

Turn the pot off. Stir in the shredded cheddar cheese and heavy cream until the sauce is completely smooth and creamy.

  6. 6

    Serve warm immediately.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. When you reheat it, add a tiny splash of milk or water to bring back that creamy texture. This dish is great served with a side of steamed broccoli or a fresh green salad.
