There is nothing quite like a warm bowl of soup when you want a hearty meal. This Italian sausage pasta soup has become a favorite in my kitchen because it is so satisfying and full of flavor. The combination of savory sausage and creamy broth makes it feel like a hug in a bowl.

My best tip is to use high quality sun dried tomatoes packed in oil. They add a deep sweetness that balances the saltiness of the sausage. If you want a bit of extra brightness at the end, a squeeze of fresh lemon juice works wonders.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 cup sun dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 8 ounces small pasta shells or orecchiette
  • 2 cups chopped fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper to taste

Instructions

    Heat the olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up into small pieces with your spoon.

    Add the onion to the pot and cook for about 5 minutes until it softens. Stir in the garlic and cook for another minute until fragrant.

    Pour in the chicken broth and add the sun dried tomatoes and oregano. Bring the mixture to a gentle boil.

    Stir in the pasta and cook according to the package instructions until it is al dente.

    Turn the heat down to low. Stir in the spinach and heavy cream. Let it simmer for a few minutes until the spinach wilts.

Store any leftovers in an airtight container in the fridge for up to three days. Keep in mind that the pasta will soak up the broth as it sits, so you may need to add a splash of water or extra broth when you reheat it. Serve with a side of crusty garlic bread to soak up the creamy soup.
