This creamy asparagus pasta is one of my favorite go to dinners when I want something fresh and comforting. It combines tender asparagus with sweet peas and a lovely hit of lemon, all tied together by plenty of Parmesan cheese.

Because everything cooks in the same pot, cleanup is a total breeze. My top tip is to use fresh lemon zest to really brighten up the sauce before you serve it.

Ingredients

  • 1 pound pasta of your choice
  • 1 bunch asparagus, trimmed and cut into 2 inch pieces
  • 1 cup frozen peas
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

Instructions

    Bring a large pot of salted water to a boil and cook the pasta according to the package directions.

    Add the asparagus pieces to the boiling water during the last three minutes of cooking time.

    Add the frozen peas to the pot during the final minute of cooking.

    Drain the pasta and vegetables, reserving about half a cup of the cooking water.

    Return the empty pot to the stove over medium heat and melt the butter.

    Sautรฉ the garlic for one minute until it smells great.

    Stir in the cream, lemon juice, lemon zest, and Parmesan cheese until the sauce is smooth and warm.

    Toss the pasta and vegetables back into the pot, adding a splash of the reserved pasta water if you need to thin the sauce.

    Season with salt and pepper before serving warm.

Serve this dish immediately while the sauce is silky and hot. You can store leftovers in an airtight container in the fridge for two days, just add a splash of milk when reheating to bring the creaminess back.
