Creamy Loaded Cheesy Potato Soup

I like to use a mix of potato types to get the best texture in every spoonful. If you have extra time, save a little bit of the crispy bacon to sprinkle on top right before serving for that perfect crunch.
Ingredients
- 6 slices thick cut bacon, chopped
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and cubed
- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese
- 1 cup heavy cream
- 2 tablespoons all purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh chives for garnish

Cook the chopped bacon in a large pot or Dutch oven over medium heat until it is nice and crispy.

Remove the bacon with a slotted spoon and set it aside, but leave about two tablespoons of bacon grease in the pot.

Add the onion to the pot and cook until soft, then stir in the garlic for about one minute until fragrant.

Whisk the flour into the onions and garlic, then slowly pour in the broth while stirring constantly to avoid any lumps.

Add the cubed potatoes to the pot and bring the liquid to a gentle boil.

Reduce the heat and let the soup simmer for about 20 minutes or until the potatoes are tender when pierced with a fork.

Stir in the heavy cream and shredded cheddar cheese, continuing to stir until the cheese is completely melted.
