- 1/2 cup dry white wine or chicken stock
- 1/2 cup chicken stock
- 1/2 cup heavy cream
- 1/3 cup sun dried tomatoes, chopped
- 1/2 cup grated Parmesan cheese
- Fresh basil for garnish

Season the chicken thighs generously with salt and pepper on both sides.

Heat one tablespoon of olive oil in a large skillet or Dutch oven over medium high heat. Sear the chicken for 4 to 5 minutes per side until it is golden brown and cooked through. Remove the chicken from the pan and set it aside.

In the same pan, add the remaining oil, tomato paste, garlic, oregano, thyme, and red pepper flakes. Cook for about one minute until everything smells wonderful.
