There is a reason this soup is so popular. It brings together all the best flavors of the classic chicken dish and turns them into a warm bowl of goodness that feels like a hug on a cold day.

It is the perfect meal when you want something satisfying but special enough for a family dinner. I like to keep the kale chopped into smaller pieces so every spoonful has a bit of everything.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, diced
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, chopped
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes
  • 6 cups chicken broth
  • 8 ounces pasta of your choice
  • 2 cups chopped kale
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the chicken pieces and cook until browned on all sides, then remove them from the pot.

    In the same pot, add the onion and cook until soft. Stir in the garlic, sun dried tomatoes, oregano, and red pepper flakes for about one minute.

    Pour in the chicken broth and bring everything to a gentle boil.

    Stir the cooked chicken back into the pot along with the chopped kale.

This soup tastes even better the next day after the flavors have had time to meld in the fridge. Store leftovers in an airtight container for up to three days. If the pasta absorbs too much broth while sitting, simply add a splash of water or extra broth when you reheat it on the stove.
