There is something so comforting about a simple chicken dinner that comes together in one pan. This recipe uses boneless thighs because they stay nice and juicy, and the mushroom pan sauce adds so much flavor to every single bite.

I love serving this over a bed of fluffy rice or pasta to soak up all that extra creaminess. If you are watching your carbs, it also tastes wonderful served alongside a fresh green salad or some roasted vegetables.

Ingredients

  • 4 boneless skinless chicken thighs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cooking oil
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1/2 cup chicken broth
  • 1 cup half and half, room temperature
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish, optional

Instructions

  1. 1

Season both sides of the chicken thighs with salt and pepper.

  2. 2

Heat a large skillet over medium heat and add the cooking oil.

  3. 3

Add the chicken thighs to the pan and cook for about 5 minutes per side until they are golden brown and cooked through.

  4. 4

Remove the chicken from the skillet to a plate and cover it with foil to keep it warm.

  5. 5

Add the sliced mushrooms to the same skillet and cook until they are browned and tender.

  6. 6

Stir in the minced garlic and cook for about one minute until it smells fragrant.

  7. 7

Pour in the chicken broth to deglaze the pan, scraping up all the tasty browned bits from the bottom.

  8. 8

Pour in the half and half and let the mixture simmer gently over medium low heat.

  9. 9

Stir in the Parmesan cheese until the sauce is smooth and slightly thickened.

  10. 10

Return the chicken and any juices from the plate back into the skillet, coating the chicken in the sauce, and serve warm.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. To reheat, warm it gently on the stove over low heat and stir it often to keep the sauce smooth and creamy.
