There is nothing quite like a big bowl of pasta after a long day. This recipe is a favorite in our house because it tastes delicious and keeps cleanup to a minimum since everything cooks in the same pot.

My best tip is to use high quality Italian sausage as it adds so much flavor to the sauce. Feel free to stir in a handful of fresh spinach at the very end if you want to add a bit of green to your meal.

Ingredients

  • 1 pound Italian sausage, casing removed
  • 1 tablespoon olive oil
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 12 ounces penne pasta
  • 1 can crushed tomatoes, 28 ounces
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

    Heat the olive oil in a large pot or deep skillet over medium heat.

    Add the sausage and cook until browned, using a spoon to break it into small pieces.

    Add the onion to the pot and cook until soft, then stir in the garlic and oregano for about one minute.

    Pour in the crushed tomatoes, chicken broth, and uncooked penne pasta.

    Bring the mixture to a gentle boil, then turn the heat down to low and cover with a lid.

    Simmer for about 12 to 15 minutes or until the pasta is tender and most of the liquid is absorbed.

    Remove the lid and stir in the heavy cream and parmesan cheese.
