There is nothing quite like a big bowl of this creamy sausage soup on a chilly evening. It is one of my favorite meals because it comes together quickly but tastes like it has been simmering on the stove for hours.

I love serving this to my family because it is filling and satisfying. If you want to add a little extra color, try stirring in a handful of fresh baby spinach right at the end until it just wilts.

Ingredients

  • 1 pound Italian sausage, casing removed
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups dried pasta like rotini or shells
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Instructions

  1. 1

Heat the olive oil in a large pot over medium heat.

  2. 2

Add the Italian sausage and cook until browned, breaking it up with a spoon as you go.

  3. 3

Add the onion to the pot and cook until soft and translucent.

  4. 4

Stir in the minced garlic and cook for about one minute until fragrant.

  5. 5

Pour in the chicken broth and bring the mixture to a gentle boil.

  6. 6

Add the dry pasta and cook according to the package instructions until al dente.

  7. 7

Lower the heat and stir in the heavy cream and grated Parmesan cheese until the soup is smooth and creamy.

  8. 8

Season with salt and pepper to your liking before serving warm.

๐Ÿ’ก Tips

Serve this soup with a slice of crusty bread for dipping. You can store leftovers in an airtight container in the fridge for up to three days, though the pasta may soak up some of the broth. Simply add a splash of extra broth when reheating.
