Peanut butter ramen is one of my favorite ways to turn a simple pack of noodles into a satisfying meal. The creamy sauce balances salty, sweet, and spicy notes perfectly, making it a hit for busy weeknights when you want something cozy.

My top tip for this recipe is to save a little splash of the noodle cooking water. Stirring it into your peanut sauce helps it cling to the noodles much better, creating a silky texture that feels restaurant quality.

Ingredients

  • 1 pack instant ramen noodles, seasoning packet discarded
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon soy sauce
  • 1 teaspoon chili garlic sauce or sriracha
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 2 tablespoons hot water from the noodle pot
  • 1 green onion, thinly sliced
  • 1 teaspoon toasted sesame seeds

Instructions

    Boil the ramen noodles according to the package directions, but skip the seasoning packet.

    While the noodles cook, whisk together the peanut butter, soy sauce, chili garlic sauce, honey, ginger, and garlic in a small bowl.

    Before draining the noodles, carefully scoop out two tablespoons of the hot cooking water and whisk it into your peanut butter mixture until smooth.

    Drain the noodles and add them back to the pot or into a bowl.

    Pour the peanut sauce over the hot noodles and toss well to coat everything evenly.

    Top with sliced green onions and sesame seeds before serving.
