This dish is a favorite in my kitchen because it is so satisfying and simple to put together on a busy weeknight. It brings together tender chicken, wholesome broccoli, and fluffy rice in a creamy sauce that feels like a warm hug.

I love how the poppy seeds add a little bit of texture, but the real star is that buttery cracker topping. Just make sure to crush your crackers well so you get a nice crunch in every single bite.

Ingredients

  • 3 cups cooked shredded chicken
  • 2 cups cooked white rice
  • 2 cups steamed broccoli florets
  • 1 can condensed cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon poppy seeds
  • 1 sleeve buttery round crackers, crushed
  • 4 tablespoons butter, melted

Instructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9x13 inch baking dish.

  2. 2

In a large mixing bowl, combine the shredded chicken, cooked rice, steamed broccoli, cream of chicken soup, and sour cream.

  3. 3

Stir in the shredded cheddar cheese and poppy seeds until everything is well combined.

  4. 4

Spread the mixture evenly into your prepared baking dish.

  5. 5

In a small bowl, toss the crushed crackers with the melted butter.

  6. 6

Sprinkle the buttery cracker mixture over the top of the casserole.

  7. 7

Bake for 25 to 30 minutes until the casserole is bubbly and the topping is golden brown.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to three days. If you want to make this ahead of time, assemble the casserole but wait to add the cracker topping until right before you put it in the oven so it stays crispy.
