There is nothing quite like a warm bowl of butternut squash soup when the weather starts to cool down. It is thick, creamy, and feels like a big hug in a bowl, making it a favorite in my house for quick weeknight dinners.

My best tip for this recipe is to make sure you roast the squash until it is truly caramelized at the edges. That extra bit of color adds a wonderful depth of flavor that you just cannot get from boiling the squash.

Ingredients

  • 1 large butternut squash, peeled and cubed
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • 1/4 cup heavy cream or coconut milk

    Preheat your oven to 400 degrees Fahrenheit.

    Toss the cubed butternut squash with a tablespoon of olive oil and a pinch of salt on a baking sheet.

    Roast the squash for about 30 minutes until it is tender and lightly browned.

    While the squash roasts, heat the remaining oil in a large pot over medium heat.

    Add the onion and cook until soft, then stir in the garlic and cook for another minute.

    Add the roasted squash to the pot along with the vegetable broth and nutmeg.

    Simmer the mixture for 10 minutes then use an immersion blender to puree the soup until it is completely smooth.

Serve this soup with a slice of crusty bread or some toasted pumpkin seeds on top for a nice crunch. If you have leftovers, store them in an airtight container in the fridge for up to three days. It actually tastes even better the next day after the flavors have had time to settle.
