There is nothing quite like a warm bowl of soup on a chilly evening. This recipe is a favorite in my kitchen because it tastes fancy but is actually quite simple to pull together after a long day.

My best tip is to use a high quality smoked paprika if you have one. It really makes the sweetness of the peppers shine and adds that lovely depth of flavor that makes everyone ask for seconds.

Ingredients

  • 2 jars of roasted red peppers, drained
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 2 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1 cup shredded Gouda cheese
  • Salt and black pepper to taste

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the onion and cook until it is soft and translucent, which takes about five minutes.
