There is nothing quite like a warm bowl of roasted red pepper soup when the weather turns chilly. This recipe is a favorite in my kitchen because the roasting process brings out a natural sweetness in the peppers and tomatoes that is just delicious.

My best tip for this recipe is to make sure you char the peppers well under the broiler. Getting that slightly smoky flavor in the skin really makes a big difference in the final taste of the soup.

Ingredients

  • 4 large red bell peppers
  • 1 pound ripe tomatoes, halved
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried thyme
  • 1/2 cup heavy cream
  • Salt and black pepper to taste

    Preheat your oven broiler and place the bell peppers and tomatoes on a baking sheet.

    Broil the vegetables until the skins are charred and blistered, then remove them and let them cool.

    Peel the charred skin off the peppers and discard the seeds.

    Heat the olive oil in a large pot over medium heat and cook the onion until it is soft and translucent.

    Add the minced garlic and cook for another minute until fragrant.

    Place the roasted peppers, tomatoes, onions, garlic, and broth into the pot.
