There is something truly special about a warm bowl of soup when the weather turns cold. This recipe brings together savory Italian sausage and pillowy gnocchi in a creamy broth that tastes just like a restaurant favorite.

My family loves this because it is so filling and comes together quite quickly. If you want a little extra brightness, a squeeze of fresh lemon juice right before serving really makes the flavors pop.

Ingredients

  • 1 pound Italian sausage, casings removed
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 pound potato gnocchi
  • 2 cups fresh baby spinach
  • 1/2 cup heavy cream
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Freshly grated parmesan cheese for topping

Instructions

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the sausage and cook until browned, breaking it apart with a wooden spoon as it cooks.
