There is something so special about coming home to a house that smells like slow cooked comfort food. This lemon chicken is a favorite in our house because the chicken stays incredibly juicy while soaking up all that tangy and creamy sauce.

My best tip is to use fresh lemon juice rather than the bottled kind. It really makes the flavor shine through the creaminess of the Parmesan. You will want to save every drop of the extra sauce for serving over your favorite side dish.

Ingredients

  • 4 boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • 1 tablespoon fresh parsley, chopped

Instructions

    Place the chicken breasts in the bottom of your slow cooker.

    Season the chicken with salt, pepper, and dried oregano.

    Add the minced garlic, chicken broth, and lemon juice over the top of the chicken.

    Cover and cook on low for 4 hours or on high for 2 to 3 hours until the chicken is tender and cooked through.

    Remove the chicken from the slow cooker and set it aside on a plate.

    Stir the heavy cream, Parmesan cheese, and cornstarch slurry into the sauce remaining in the slow cooker.

    Cover and cook on high for about 10 to 15 minutes until the sauce thickens.

    Return the chicken to the slow cooker to coat it with the thickened sauce before serving.

    Garnish with fresh parsley before you bring it to the table.

This dish tastes wonderful served over hot pasta, rice, or buttery mashed potatoes. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat gently on the stove.
