There is nothing quite like a warm bowl of soup when the weather starts to cool down. This sweet potato soup is one of my favorite go to recipes because it is naturally creamy without needing any dairy, and the sweet potatoes give it such a lovely, vibrant color.

I love how the curry powder adds just a gentle hint of warmth without being too spicy. If you want to make this even faster on a busy weeknight, you can peel and chop your potatoes the day before so they are ready to go as soon as you start cooking.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 3 large sweet potatoes, peeled and cubed
  • 3 cups vegetable broth
  • 1 tablespoon curry powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can full fat coconut milk
  • Fresh cilantro for garnish

Instructions

    Heat the olive oil in a large pot over medium heat and add the chopped onion.

    Cook the onion for about 5 minutes until it is soft and translucent.

    Add the cubed sweet potatoes, curry powder, salt, and pepper to the pot and stir for 2 minutes to toast the spices.

    Pour in the vegetable broth, bring the mixture to a boil, then turn the heat down to low.

    Cover the pot and simmer for about 20 minutes, or until the potatoes are very tender when pierced with a fork.

    Use an immersion blender to puree the soup until it is completely smooth.

    Stir in the coconut milk and heat through for another 2 minutes.

    Serve warm with a sprinkle of fresh cilantro on top.

Store any leftovers in an airtight container in the fridge for up to four days. This soup also freezes beautifully, so feel free to make a double batch for later. Try serving it with a side of crusty bread or toasted pumpkin seeds for a nice crunch.
