I never thought I would be a person who makes spinach soup on repeat, but this recipe changed my mind. By adding a russet potato and a bit of cream cheese, the texture becomes incredibly velvety and filling.

It is a wonderful way to use up fresh baby spinach while making sure everyone at the table actually enjoys their greens. The secret is the homemade croutons, which add that necessary crunch to every spoonful.

Ingredients

  • 16 ounces fresh baby spinach
  • 1 large russet potato, peeled and cubed
  • 1 small onion, diced
  • 2 tablespoons butter
  • 3 cups vegetable or chicken broth
  • 4 ounces cream cheese
  • 1/2 cup half and half
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper to taste
  • Homemade croutons for serving

Instructions

    Melt the butter in a large pot over medium heat and cook the onion until it is soft and translucent.
