This creamy tomato and spinach pasta is a real lifesaver on busy weeknights when you want something fresh but do not have much time. It is much tastier than a boxed meal and uses basic ingredients you likely already have in your pantry and fridge.

The secret is letting the tomatoes cook down until they melt into the cream, creating a light yet rich sauce that clings perfectly to every noodle. Adding the spinach at the very end keeps it bright and adds a nice pop of color to the final plate.

Ingredients

  • 12 ounces pasta of your choice
  • 2 tablespoons olive oil
  • 3 cups chopped fresh tomatoes
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 3 cups fresh baby spinach
  • 1/4 cup grated parmesan cheese
  • Salt and black pepper to taste
  • Fresh basil for garnish

Instructions

    Bring a large pot of salted water to a boil and cook your pasta according to the package directions until al dente.

    While the water boils, heat the olive oil in a large skillet over medium heat.

    Add the chopped tomatoes and garlic to the skillet and cook for about 8 to 10 minutes until the tomatoes soften and release their juices.
