Creamy Tomato and Spinach Pasta
A simple, comforting pasta dish that turns fresh summer tomatoes into a silky, flavorful sauce in just thirty minutes.
dailyrecipesbook.comThis creamy tomato and spinach pasta is a real lifesaver on busy weeknights when you want something fresh but do not have much time. It is much tastier than a boxed meal and uses basic ingredients you likely already have in your pantry and fridge.
The secret is letting the tomatoes cook down until they melt into the cream, creating a light yet rich sauce that clings perfectly to every noodle. Adding the spinach at the very end keeps it bright and adds a nice pop of color to the final plate.
Ingredients
- 12 ounces pasta of your choice
- 2 tablespoons olive oil
- 3 cups chopped fresh tomatoes
- 3 cloves garlic, minced
- 1/2 cup heavy cream
- 3 cups fresh baby spinach
- 1/4 cup grated parmesan cheese
- Salt and black pepper to taste
- Fresh basil for garnish
Instructions
- 1
Bring a large pot of salted water to a boil and cook your pasta according to the package directions until al dente.
- 2
While the water boils, heat the olive oil in a large skillet over medium heat.
- 3
Add the chopped tomatoes and garlic to the skillet and cook for about 8 to 10 minutes until the tomatoes soften and release their juices.
- 4
Pour the heavy cream into the skillet and stir gently to combine with the tomato mixture, letting it simmer for another 2 to 3 minutes.
- 5
Drain the cooked pasta and add it directly into the skillet with the sauce.
- 6
Toss in the fresh baby spinach and stir everything together until the spinach is just wilted and the pasta is coated in the creamy sauce.
- 7
Remove from the heat and stir in the parmesan cheese, then season with salt and pepper to taste.
- 8
Serve warm, topped with a few torn basil leaves if you like.
๐ก Tips
Store any leftovers in an airtight container in the fridge for up to three days. If the sauce seems a little dry when reheating, just add a tiny splash of water or cream to loosen it back up.
