There is something special about the combination of crispy bacon, sharp cheddar, and fluffy potatoes. This casserole is a family favorite because it tastes just like a classic twice baked potato but is much easier to serve to a hungry crowd.

I love making this for weekend dinners or holiday gatherings. A quick tip is to make sure your potatoes are well drained after boiling, as this helps the casserole stay creamy without becoming watery.

Ingredients

  • 5 pounds russet potatoes, peeled and cubed
  • 1/2 cup butter
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups sharp cheddar cheese, shredded
  • 8 slices bacon, cooked and crumbled
  • 1/2 cup green onions, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

    Preheat your oven to 375 degrees Fahrenheit and grease a 9x13 inch baking dish.

    Place the cubed potatoes in a large pot and cover them with water. Bring to a boil and cook until they are tender, which usually takes about 15 minutes.
