There is nothing quite like a big bowl of white bean soup when you want something cozy for dinner. It is simple to make and manages to feel really satisfying without being too heavy.

I love how the beans break down just enough to make the broth nice and thick. If you have some crusty bread on hand, it makes the perfect partner for dipping into the bowl.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 3 cloves garlic, minced
  • 2 cans cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups fresh spinach
  • Salt and black pepper to taste

Instructions

    Heat the olive oil in a large pot over medium heat.

    Add the onion, carrots, and celery. Cook these until they are soft, which usually takes about 5 to 7 minutes.

    Stir in the garlic and cook for another minute until it smells great.

    Add the white beans, vegetable broth, thyme, and the bay leaf to the pot.

    Bring the mixture to a boil, then turn the heat down low and let it simmer for 20 minutes.

    Use a potato masher or a fork to lightly mash a few of the beans right in the pot to thicken the soup up.

    Remove the bay leaf, stir in the fresh spinach, and cook for just a minute until the leaves wilt.
