There is something so satisfying about a warm, bubbly pan of enchiladas. This version uses a creamy sauce and zesty green chiles to create a dinner that my whole family asks for every single week.

I love making these because they come together quickly, especially if you use a store bought rotisserie chicken. My top tip is to lightly warm your tortillas in the microwave for a few seconds before rolling them so they do not crack when you fill them.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup black beans, rinsed and drained
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 2 tablespoons butter
  • 2 tablespoons all purpose flour
  • 1 cup chicken broth
  • 1 cup sour cream
  • 4 ounces diced green chiles
  • 1/2 teaspoon cumin

Instructions

    Preheat your oven to 350 degrees Fahrenheit and lightly grease a 9 by 13 inch baking dish.

    In a medium bowl, combine the shredded chicken, black beans, and one cup of the shredded cheese.

    Spoon a portion of the chicken mixture into each tortilla, roll them up tight, and place them seam side down in the prepared baking dish.

    To make the sauce, melt the butter in a saucepan over medium heat. Stir in the flour and cook for one minute.

    Whisk in the chicken broth and heat until the mixture thickens slightly. Remove from the heat and stir in the sour cream, green chiles, and cumin.

    Pour the creamy sauce evenly over the rolled tortillas and top with the remaining cup of cheese.

    Bake for 20 minutes or until the cheese is melted and the sauce is bubbly.
