There is something so satisfying about a bowl of creamy soup that hits all the notes of a classic Italian pasta dish. This recipe is a favorite in my house because it is much faster to make than traditional lasagna but just as filling and cozy.

My best tip for this recipe is to keep an eye on your noodles while they cook. Since they go straight into the broth, you want to pull the pot off the heat as soon as they are tender so they do not soak up too much liquid.

Ingredients

  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound chicken breast, cut into small cubes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into bite sized pieces
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups fresh baby spinach
  • Fresh parsley for garnish

Instructions

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the onion and cook until it is soft, then stir in the garlic and cook for one minute.

    Add the chicken cubes and cook until they are browned on all sides.

    Pour in the chicken broth and add the oregano, salt, and pepper.

    Bring the mixture to a simmer and stir in the broken lasagna noodles.

    Cook for about 10 to 12 minutes or until the noodles are soft.

    Turn the heat to low and stir in the heavy cream, mozzarella, and parmesan until the cheese is melted and the soup is creamy.

    Stir in the spinach at the very end and let it wilt for about one minute.

Serve this soup with a side of crusty garlic bread to soak up the creamy broth. If you have leftovers, store them in an airtight container in the fridge for up to three days, though keep in mind the noodles may absorb some liquid as they sit.
